Paccheri pasta with sausage and bruscandoli

With the first spring heat, during walks in the countryside, we take the opportunity to collect many wild herbs, and in the Veneto region countryside the sprouts of "bruscandoli" emerge, a dialect term for wild hops.

These sprouts are the masters in spring first courses, the most classic way to enhance them is without a doubt the excellent risotto with "bruscandoli", but today we leave aside the rice and take some delicious paccheri from the pantry.

Pasta with sausage and bruscandoli is a tasty first course made with a rich condiment based on fresh sausage and wild spring herbs. A delicate but rustic condiment for a complete and tasty first course!

Follow our steps to prepare an amazingly simple spring recipe!

Ingredients

  • 280g paccheri pasta
  • 2 sausages
  • a bunch of bruscandoli (wild hops)
  • half a glass of white wine
  • 1 clove of garlic
  • 1 fresh chili
  • salt and pepper to taste
  • extra virgin olive oil to taste

Instructions

We begin the preparation of the paccheri pasta with sausage and bruscandoli by cleaning the sprouts. Break up the bruscandoli removing any woody and rubbery parts, if you prefer wash them and dry them very well.

💡 Our advice is to never wash sprouts, aromatic and spontaneous herbs (obviously except those nested in the ground such as poppy sprouts).

Put a saucepan on the stove with plenty of salted water to boil. In the meantime, sautée some fresh chili pepper and garlic in a pan with a drizzle of oil.

Add the bruscandoli, mix well and cook over high heat for a few minutes. Steam with white wine and then add a ladle of pasta cooking water.

To the side, peel the sausage, crumble it and brown it on a hot pan until golden brown. Then add it to the bruscandoli sauce and mix well.

Cook the pasta "al dente", drain and add it to the sauce in the pan. Stir in a drizzle of oil, cooking water and, if you like, some Parmesan.

Serve the steaming pasta with sausage and bruscandoli adding a sprinkling of pepper.

 

Notes

☞ Do you want to give it a touch more rock? Add a seasoned blue cheese in when tossing the pasta.
